It’s amazing what a teenage boy will come up with. It’s also amazing that I never thought of it myself.
But children are so undaunted. So willing to take risks (except those involving the words “good for you.”) Not worried about the way you’re supposed to do it. Not like us adults. And sometimes, this can lead to good things.
My son has one favorite food group: processed. Getting him to eat healthy is an ongoing battle. But he is creative. He can even cook a little. I want my children to be versatile and have lots of skills. Also it makes my life easier. 😉
While making an omelet one morning, my son decided to throw in his two favorite pizza toppings: mozzarella and pepperoni, and voila! A new breakfast favorite was born. I have to admit, I raised my eyebrows while he cooked away, thinking that it sounded like a strange combination. I even told him so. But then I tried it. And then I made myself one. So good. It’s like having pizza for breakfast, but more breakfasty. Cheesey and gooey with the spice of pepperoni. And very filling.
It’s a fun way to shake things up a bit and make breakfast more interesting on a laid-back Saturday or a lazy summer-vaction day. I am also a big believer in protein for breakfast and this one has it.
If you make omelets all the time, then you know what to do. If not, here’s a little how-to:
Melt a slice of butter (or a drizzle of olive oil) in a pan on medium heat.
Whisk one egg with one tablespoon of milk.
Pour the beaten egg into the pan.
Place 6 or so pepperoni over half of the egg as it cooks.
Place a large handful of mozarella over the pepperoni.
Sprinkle with Italian seasonings.
When the egg is mostly done, fold the side with no toppings over onto the pepperoni &cheese, to form a half-circle.
Let cook until inside is done. (No egg is oozing out, but melted cheese is.)
Flip if needed to brown other side more.
*If it turns into a jumbled-up mess, it will still taste just as good! 😉
For a more grown-up version, add chopped peppers, onions, and mushrooms to the inside while cooking. Then it’s even better!
So, there you have it. A breakfast my son created that you and your children will love. And it’s gluten-free, so that makes it extra-special for us. (Check the package of pepperoni to make sure.)
