Easy No-Bake Gluten-Free Granola

Do you ever buy those yogurts that come with their own little packets of crunchies to add on top?  We love those things, but they are pretty expensive, considering how quickly our family can go through them, so now we make our own!
I did some experimenting, and came up with this EASY No-Bake Gluten-Free Granola that we love and make over and over again.  It’s tasty, easy, and sooo much cheaper than store-bought granola.

It’s so versatile, too.  Not only do we sprinkle it on yogurt, but we use it just like cereal.  My youngest daughter likes it in a bowl with milk, for breakfast.  We can make it fancy with raisins, chocolate chips, nuts, and berries.  I even use a version of this granola in desserts, like this gooey apple crumble, and another recipe I will be posting very soon!

Here’s how I make it:
INGREDIENTS:
  • 2 cups Quick Oats
  • 1/4 cup brown sugar
  • 3 to 4 Tbsp. honey
  • 4 Tbsp. real butter (divided)
  • 1 tsp. cinnamon
 *Note: For sweeter granola, you can increase sugar to 1/2 cup.  If you prefer it less sweet, you can leave the brown sugar out completely.
DIRECTIONS:
  1. Melt 3 Tbsp. butter in large skillet over medium heat (until just melted.)
  2. Add oats; coat well.
  3. Add cinnamon.
  4. Stir continuously (about 3-4 minutes.)
  5. When oats begin to brown, lower heat to medium low.
  6. Remove from heat temporarily and add final Tbsp. butter and brown sugar.
  7. Continue to stir vigorously over medium low heat until mostly a golden brown color (about 3 minutes.)
  8. Drizzle on honey, one Tbsp. at a time, stirring well to blend after each Tbsp.
  9. Continue stirring until oats reach desired doneness/color (about 1-2 minutes.)
  10. Remove from heat and let cool completely.
*Be careful not to overcook or burn!  If at any point the oats begin to have a burnt smell, remove from heat & add more butter before continuing to cook.
As the granola cools, it will develop more of a crunchiness.  When it’s completely cooled, stir with a wooden spoon to break apart all the bigger chunks to end up with little crunchies.  Store in an airtight container.
Now it’s ready to enjoy any number of ways.

    I love that you cook this on the stove! My go-to recipe bakes in the oven for an hour, so I don't make it much in the summer.

    Anonymous, you can actually just leave it out. I've made it without it, and have added more brown sugar instead. (Start with half a cup and go from there, depending on how sweet you want it..) The most important thing is to cook it 'til you are happy with the color, without burning it. It will darken as it cools, too.
